Golden,
crispy pierogis — the perfect vessel for Nashville hot chicken filling.
The Story Behind the Dish
Happy
National Hot Chicken Day, friends! If you're new to the Pierogi & Pancit
kitchen, here's what you need to know: we believe that the most beautiful
things happen when traditions meet, when recipes travel across oceans, and when
a little cayenne pepper finds its way into pierogi dough. Today — March 30 — is
the perfect excuse to bring the heat, and we're doing it with one of our
most-requested creations: Hot Chicken Pierogis.
Picture
this: golden, crispy pierogis fresh from the skillet, each one bursting with
smoky, cayenne-laced Nashville hot chicken filling. They're drizzled generously
with a fiery hot chicken sauce, then cooled down with tangy dill pickle slices
and a cloud of creamy coleslaw — all arranged on a rustic wooden board. And
right alongside? A steaming bowl of chili garlic pancit, our nod to Filipino
heritage, with rice noodles kissed by chili flakes and soy sauce. It's comfort
food with a passport.
In
our kitchen, cultures don't clash — they collaborate. The pierogi comes from
Polish grandmothers who knew that wrapping love in dough was the universal
language. The pancit comes from Filipino family gatherings where noodles mean
long life and good fortune. And Nashville hot chicken? That's the bold American
spirit that ties it all together. So grab your apron, Alfred — let's make
something unforgettable today.
Why This Recipe Works
●
The
perfect pocket:
Pierogi dough creates a tender, slightly chewy vessel that holds the spicy hot
chicken filling without falling apart — and it crisps up beautifully in the
skillet.
●
Nashville
hot sauce brings the fire: The
combination of cayenne pepper, brown sugar, and paprika delivers that signature
smoky, sweet heat that Nashville is famous for.
●
Cool-down
crew: Tangy dill pickles and
creamy coleslaw balance the spice — just like they do in a classic Nashville
hot chicken plate. Every bite has layers.
●
Filipino
soul on the side: The
chili garlic pancit ties in the Filipino side of our heritage with familiar
flavors of soy sauce, garlic, and a touch of heat from chili flakes.
●
A
crowd-pleaser for any occasion:
Whether it's game day, a potluck, or a cozy family dinner, this dish brings
people together around the table — and keeps them talking.

πΆ️ Hot Chicken Pierogis A Pierogi & Pancit Original Recipe Prep Time - 45 minutes Cook Time - 30 minutes Total Time - 1 hour 15 min Servings (4 -6 0 Difficulty - Moderate Ingredients
For the Pierogi Dough: • 3 cups all-purpose flour • 1 large egg • 1 cup warm water • 1 tablespoon sour cream • ½ teaspoon salt • 1 tablespoon vegetable oil For the Hot Chicken Filling: • 2 cups shredded cooked chicken
(rotisserie works great!) • 2 tablespoons cayenne pepper • 1 tablespoon brown sugar • 1 tablespoon paprika • 1 teaspoon garlic powder • ½ teaspoon black pepper • 3 tablespoons hot sauce (like
Frank's RedHot) • 2 tablespoons melted butter • Salt to taste For the Nashville Hot Drizzle: • ¼ cup cayenne pepper • 2 tablespoons brown sugar • 1 teaspoon paprika • 1 teaspoon garlic powder • ½ cup lard or vegetable oil
(heated) For Frying & Garnish: • Butter or oil for pan-frying • Dill pickle slices • Creamy coleslaw (store-bought or
homemade) • Red chili flakes for finishing Instructions
1. Make the Pierogi Dough: Combine flour and salt in a large
bowl. Create a well in the center and add the egg, warm water, sour cream,
and vegetable oil. Mix until a smooth dough forms — it should be soft but not
sticky. Knead on a lightly floured surface for about 5 minutes until elastic.
Wrap in plastic wrap and let rest at room temperature for 30 minutes. 2. Prepare the Hot Chicken Filling: In a medium bowl, toss the
shredded chicken with cayenne pepper, brown sugar, paprika, garlic powder,
black pepper, hot sauce, and melted butter. Mix well until the chicken is
evenly coated. Taste and adjust the heat to your liking. 3. Assemble the Pierogis: Roll out the rested dough on a
floured surface to about ⅛-inch thickness. Using a 3-inch round cutter (or a
drinking glass), cut out circles. Place about 1 tablespoon of hot chicken
filling in the center of each circle. Fold the dough in half over the
filling, press the edges firmly together, and crimp with a fork to seal
securely. 4. Boil the Pierogis: Bring a large pot of generously
salted water to a rolling boil. Drop the pierogis in batches — don't
overcrowd the pot. They're done when they float to the top, about 3–4
minutes. Remove with a slotted spoon and set on a lightly oiled plate. 5. Pan-Fry to Golden Perfection: Heat butter or oil in a large
skillet over medium-high heat. Pan-fry the boiled pierogis until golden and
crispy on both sides, about 2–3 minutes per side. Work in batches to avoid
crowding. Set aside on a warm plate. 6. Make the Nashville Hot Drizzle: In a heat-safe bowl, combine the
cayenne pepper, brown sugar, paprika, and garlic powder. Heat the lard or
vegetable oil until very hot (but not smoking) and carefully pour it over the
spice mixture. Stir until smooth and combined. Let cool slightly — it will
thicken as it sits. 7. Plate & Serve: Arrange the crispy pierogis on a
rustic wooden board or large platter. Drizzle generously with the Nashville
hot sauce. Top with dill pickle slices and a generous mound of creamy
coleslaw. Sprinkle red chili flakes over everything for color and extra kick.

Pro Tips from the Pierogi & Pancit Kitchen • Make dough ahead: The pierogi dough can be made the
night before and refrigerated overnight. Just bring it to room temperature
for about 15 minutes before rolling — it actually becomes even easier to work
with! • Rotisserie shortcut: Use a store-bought rotisserie
chicken to save time. Shred it up, toss it in the spice mix, and you've cut
your prep time significantly. • Adjust the heat: Cayenne is no joke! If you're
heat-sensitive, start with half the cayenne in both the filling and the
drizzle. You can always add more — you can't take it away. • Freeze for later: Assemble your pierogis (uncooked)
and lay them in a single layer on a parchment-lined sheet pan. Freeze until
solid, then transfer to a zip-top bag. They'll keep for up to 3 months. Boil
straight from frozen — just add an extra minute or two. • That Nashville drizzle goes on
everything:
Seriously — drizzle it over fries, scrambled eggs, pizza, roasted vegetables,
or even popcorn. Make a double batch. You'll thank us later. |
