  • 2-inch ginger, 2 bay leaves, 5 peppercorns

  • 1 tbsp fish sauce, 8–10 cups water, salt to taste

For the Rice:

  • 1 cup white or jasmine rice

  • 1 tbsp vegetable oil, 1 small onion, 2 garlic cloves

  • 1-inch ginger, 1 tbsp fish sauce, ½ tsp turmeric

  • 6 cups prepared broth, 1 cup shredded chicken

  • Black pepper to taste

Garnishes:

  • Chopped parsley, green onions

  • Hard-boiled eggs, calamansi or lemon wedges

  • Chili oil or sriracha (optional)

Step 1: Prepare the Rosół-Style Broth Simmer chicken in water with vegetables, aromatics, and fish sauce for 1.5–2 hours. Strain and season the broth. Shred the chicken and reserve 6 cups of broth for the rice.

Step 2: Cook the Arroz Caldo Base Sauté onion, garlic, and ginger. Toast rinsed rice, then add turmeric, fish sauce, and broth. Simmer until creamy and porridge-like.

Step 3: Combine and Season Stir in shredded chicken. Adjust seasoning with salt, pepper, or more fish sauce.

Step 4: Serve Ladle into bowls. Garnish with herbs, egg halves, citrus wedges, and optional heat.
