Classic Red Velvet "earthquake" Cake Recipe
Ingredients:
2½ cups all-purpose flour
1½ cups granulated sugar
1 tsp baking soda
1 tsp salt
1 tsp cocoa powder
1½ cups vegetable oil
1 cup buttermilk (room temperature)
2 large eggs
2 tbsp red food coloring
1 tsp white vinegar
2 tsp vanilla extract
Cream Cheese Frosting:
8 oz cream cheese (softened)
½ cup unsalted butter (softened)
4 cups powdered sugar
1 tsp vanilla extract
Instructions:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
In another bowl, whisk oil, buttermilk, eggs, food coloring, vinegar, and vanilla.
Gradually add dry ingredients to wet, mixing until smooth.
Divide batter evenly between pans. Bake for 30–35 minutes or until a toothpick comes out clean.
Cool cakes completely before frosting.
To make frosting: Beat cream cheese and butter until fluffy. Add powdered sugar gradually, then vanilla. Frost cooled cake layers and decorate as desired.
Why I call it an "earthquake" cake? After letting it cool down, cracks appeared, so to honor those that died from recent earthquake, and those that are now homeless or don't want to go back to their homes, this cake is in their honor.
